  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cups zucchini, sliced
  • 1 cup corn, frozen or fresh
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced summer sausage and cook until browned.
  3. Stir in the onion and bell pepper, cooking until softened.
  4. Add the zucchini and corn, cooking for an additional 5 minutes.
