- 1 lb summer sausage, sliced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cups zucchini, sliced
- 1 cup corn, frozen or fresh
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
- Heat olive oil in a large skillet over medium heat.
- Add the sliced summer sausage and cook until browned.
- Stir in the onion and bell pepper, cooking until softened.
- Add the zucchini and corn, cooking for an additional 5 minutes.
- Sprinkle Cajun seasoning over the mixture and stir well.
