  • 2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking pan.
  2. Combine the grated zucchini, granulated sugar, brown sugar, and vegetable oil in a large mixing bowl.
  3. Add the eggs and vanilla extract, mixing thoroughly until the batter is smooth.
  4. Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Prepare the cream cheese frosting by beating together softened cream cheese and butter until smooth.
  9. Add powdered sugar and the additional teaspoon of vanilla extract, beating until creamy.
  10. Spread the cream cheese frosting over the cooled cake.
  11. Slice and serve, enjoying each bite!

Notes

Squeeze excess moisture from zucchini before adding to batter. Store in the fridge for up to a week or freeze for later.
