No-Bake Coconut Lime Cheesecake

A refreshing and creamy no-bake cheesecake with the delightful flavors of coconut and lime, topped with a crunchy graham cracker crust.

  • ½ cup unsweetened shredded coconut
  • ½ cup butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Zest of 2 limes
  • Juice of 2 limes

Instructions

  1. Prepare the crust: In a bowl, combine the graham cracker crumbs and shredded coconut. Pour in the melted butter, mixing until the crumbs absorb the butter and are evenly moistened. Press this mixture into the bottom of a 9-inch springform pan.
  2. Cream the cheese: In a separate bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing well until fully incorporated.
  3. Whip the cream: In another bowl, whip the heavy cream until stiff peaks form.
  4. Combine mixtures: Gently fold the whipped cream into the cream cheese mixture.
  5. Add the citrus: Incorporate the lime zest and lime juice, folding everything together until well blended.
  6. Fill and chill: Pour the mixture over the prepared crust, cover with plastic wrap, and refrigerate for at least 4 hours or until set.
  7. Serve: Before serving, garnish with lime zest or shredded coconut. Slice and serve chilled.

Make it a day ahead for deeper flavors and chill overnight for best results.
