New York Cheesecake

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Combine the graham cracker crumbs and melted butter in a mixing bowl. Press into the bottom of the prepared pan.
  3. Beat the cream cheese in a large bowl until smooth. Gradually add in the sugar until well combined.
  4. Add the vanilla extract and mix well.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Stir in the sour cream, flour, and salt until just combined.
  7. Pour the cream cheese mixture over the crust and smooth the top.
  8. Bake for 55-60 minutes until edges are set and center is slightly jiggly.
  9. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  10. Chill in the refrigerator for at least 4 hours or overnight.

Notes

For a lighter twist, use gluten-free graham crackers or Greek yogurt in place of sour cream.
