New York Cheesecake

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 32 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the graham cracker crumbs, 1/2 cup sugar, and melted butter until well combined.
  3. Press the mixture firmly into the bottom of the springform pan.
  4. Beat the softened cream cheese, 1 cup sugar, and vanilla extract until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for about 60 minutes until the center is set but slightly jiggly.
  8. Remove from the oven and let cool at room temperature, then refrigerate for at least 4 hours.
  9. Serve with additional sour cream or fresh fruit, if desired.

Notes

For best results, use full-fat cream cheese and allow ingredients to reach room temperature before mixing. Cheesecake can be made a day in advance for deeper flavor.
