Mediterranean Quesadillas with Spinach Feta You’ll Love!

Delicious Mediterranean quesadillas filled with spinach and feta cheese, perfect for a quick meal or snack.

Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped spinach and sauté until wilted.
  3. In a bowl, combine sautéed spinach, feta cheese, mozzarella cheese, sun-dried tomatoes, and olives. Season with salt and pepper.
  4. Place a tortilla in the skillet, add a portion of the filling, and top with another tortilla.
  5. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden and the cheese is melted.
  6. Remove from skillet, cut into wedges, and serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or mushrooms.
  • Serve with a side of tzatziki or hummus for dipping.
  • These quesadillas can be made ahead and reheated for a quick meal.
