- 4 large flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Heat olive oil in a skillet over medium heat.
- Add chopped spinach and sauté until wilted.
- In a bowl, combine sautéed spinach, feta cheese, mozzarella cheese, sun-dried tomatoes, and olives. Season with salt and pepper.
- Place a tortilla in the skillet, add a portion of the filling, and top with another tortilla.
- Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden and the cheese is melted.
- Remove from skillet, cut into wedges, and serve warm.
