Meatball Soup

A comforting and hearty meatball soup filled with tender meatballs and fresh vegetables in a savory broth.

  • 1 pound ground beef or pork
  • 1/2 cup rice
  • 1 egg
  • 1/4 cup chopped cilantro
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups beef or chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 carrot, chopped
  • 1 zucchini, chopped
  • 1 cup green beans, chopped

Instructions

  1. In a large mixing bowl, combine the ground meat, rice, egg, cilantro, onion, garlic, cumin, salt, and pepper. Mix well, then form into small meatballs.
  2. Pour the beef or chicken broth and diced tomatoes into your pot. Bring to a gentle boil over medium heat.
  3. Carefully add the meatballs to the broth and let them simmer for about 15 minutes.
  4. Once the meatballs are plump, toss in the chopped carrots, zucchini, and green beans. Cook for an additional 10 to 15 minutes.
  5. Taste the soup and adjust the seasoning if necessary. Serve hot, garnished with fresh cilantro.

Notes

For make-ahead options, prepare the meatballs in advance or freeze them for later use. Customize by adding your favorite vegetables or spices.
