Mango Cucumber Salad with Chili Lime

A refreshing salad bursting with sweet mangoes and crisp cucumbers, elevated with zesty lime and a hint of chili.

Ingredients

  • 2 ripe mangoes, diced
  • 1 cucumber, diced
  • 1 lime, juiced
  • 12 chilies, finely chopped
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Combine the diced mangoes and cucumbers in a medium mixing bowl.
  2. Whisk together the lime juice, chopped chilies, and a pinch of salt in a small bowl.
  3. Pour the dressing over the mango and cucumber mixture and gently toss to combine.
  4. Sprinkle with fresh cilantro and serve immediately, or chill briefly before serving.

Notes

Add cucumbers just before serving for the best texture. Can be made a few hours in advance for enhanced flavor.
