A flavorful Lime Chicken recipe that bursts with citrusy joy, perfect for summer gatherings.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lime juice
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil
  • Optional: sour cream or yogurt for serving

Instructions

  1. Combine lime juice, chili powder, salt, and pepper in a bowl to create a marinade.
  2. Coat the chicken breasts evenly with the marinade and let them marinate for at least 30 minutes, preferably a few hours or overnight.
  3. Heat olive oil in a skillet over medium heat.
  4. Add marinated chicken breasts to the skillet and cook for 6-7 minutes on each side until the internal temperature reaches 165°F.
  5. Remove the chicken from the skillet and let it rest for a few minutes.
  6. Top the chicken with diced avocado and chopped cilantro.
  7. Serve with optional sour cream or yogurt.

Notes

For extra flavor, marinate the chicken the night before. Substitute lemon juice for a different taste. Avoid overcrowding the pan for an even sear.
