  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium saucepan, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add the rice and stir for 2-3 minutes until lightly toasted.
  4. Pour in the vegetable broth, lemon juice, and lemon zest. Season with salt and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
