  • 1 Cup Raw Cashews (soaked for one hour in hot water and drained)
  • 1/2 Cup Oat Milk (for lemon cream)
  • 2 Tablespoons Maple Syrup (for lemon cream)
  • 2 Tablespoons Lemon Juice
  • 1/4 Teaspoon Turmeric (for color)
  • 1/2 Teaspoon Lemon Extract

Instructions

  1. In a medium mixing bowl, combine chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk together for about one minute until everything is evenly incorporated and begins to thicken.
  2. Cover the bowl and place the chia pudding mixture in the fridge. Let it set for about 3 hours.
  3. Meanwhile, soak your cashews in boiling water for an hour, then drain.
  4. In a blender, combine the soaked cashews, oat milk, maple syrup, lemon juice, turmeric, and lemon extract. Blend on high until smooth and creamy.
  5. Once your chia pudding is perfectly set, evenly split the mixture into four small mason jars or dessert bowls.
  6. Gently pour the lemon cream layer over the chia pudding, allowing it to sink just slightly for a beautiful marbled effect.
  7. Chill the jars again for about 3 hours before indulging.
  8. For an extra touch, top with fresh berries or a sprinkle of crushed nuts, and enjoy.
