  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 3 cloves garlic, minced
  • 1 cup parmesan cheese, grated
  • 1 lemon (juice and zest)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta: Start by bringing a large pot of salted water to a rolling boil. Add your pasta and cook until al dente, about 7-9 minutes. Once done, drain and set aside.
  2. Melt butter: In your skillet, place it over medium heat. Add butter and let it melt gently, swirling the pan to ensure it coats the bottom.
  3. Cook chicken: Add the cubed chicken breast to the skillet and season generously with salt and pepper. Sauté until golden brown, approximately 5-7 minutes.
  4. Add vegetables: Toss in the sliced zucchini, yellow squash, and minced garlic. Stir gently while cooking for an additional 3-5 minutes.
  5. Combine with pasta: Introduce the cooked pasta into the skillet, folding it in with the chicken and veggies.
  6. Flavor it up: Squeeze the juice of your lemon and add some zest into the skillet. Mix well.
  7. Cheesy goodness: Add the grated parmesan cheese, stirring continually until melted and creamy.
  8. Serve warm: Garnish with freshly chopped parsley before enjoying.
