Kielbasa Sausage Cheesy Potato Casserole

A comforting casserole with creamy potatoes, juicy kielbasa, and a crunchy cornflake topping.

  • 1 lb (450 g) smoked kielbasa sausage, sliced into ½-inch pieces
  • 1 bag (32 oz / 900 g) frozen diced hash brown potatoes, thawed
  • 1 can (10.5 oz / 295 g) cream of chicken soup (or cream of mushroom)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • ½ cup chopped green onions (or white onion sautéed)
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons butter (melted)
  • 1 cup crushed cornflakes or Ritz crackers (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter or cooking spray.
  3. Combine cream of chicken soup, sour cream, 1½ cups cheddar cheese, green onions, garlic powder, black pepper, and paprika in a large mixing bowl.
  4. Stir in thawed hash brown potatoes until evenly coated.
  5. Add the sliced kielbasa sausage and gently fold into the mixture.
  6. Transfer the mixture to the greased baking dish and spread it evenly.
  7. Sprinkle the remaining cheddar cheese on top.
  8. Mix melted butter with crushed cornflakes or Ritz crackers, then scatter over the casserole.
  9. Bake uncovered for 40–45 minutes until golden brown and bubbly.
  10. Let the casserole rest for 5 minutes before serving.

Notes

Make-ahead tips: Prepare a day in advance and refrigerate. Add extra baking time if chilled.
