Kielbasa Potato Soup

A rich and creamy soup filled with savory kielbasa and tender potatoes, perfect for chilly evenings and cozy gatherings.

  • 1 lb kielbasa sausage, sliced into half-moons
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons flour (optional, for thickening)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove from the pot and set aside.
  3. Sauté the chopped onion and minced garlic until softened and fragrant, about 3-4 minutes.
  4. Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and let simmer for 10-15 minutes until the potatoes are tender.
  5. Whisk the flour into the milk in a separate bowl, then slowly stir this mixture into the soup for thickness.
  6. Stir in the milk, heavy cream, cooked kielbasa, thyme, salt, and pepper. Simmer for another 5 minutes.
  7. Serve hot, garnished with fresh parsley if desired.

Notes
