Kielbasa Sausage Cheesy Potato Casserole

A comforting and cheesy casserole featuring smoked kielbasa, creamy potatoes, and a crunchy topping.

  • 1 lb (450 g) smoked kielbasa sausage, sliced into ½-inch pieces
  • 1 bag (32 oz / 900 g) frozen diced hash brown potatoes, thawed
  • 1 can (10.5 oz / 295 g) cream of chicken soup (or cream of mushroom)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • ½ cup chopped green onions (or white onion sautéed)
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons butter (melted)
  • Optional: 1 cup crushed cornflakes or Ritz crackers for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. Combine the cream of chicken soup, sour cream, 1 ½ cups cheddar cheese, green onions, garlic powder, black pepper, and paprika in a large bowl, mixing until smooth.
  3. Stir in the thawed hash brown potatoes until evenly coated.
  4. Fold in the kielbasa sausage, ensuring even distribution.
  5. Spread the mixture in the baking dish and top with remaining cheddar cheese.
  6. Mix melted butter with cornflakes or crackers and sprinkle over the top.
  7. Bake uncovered for 40-45 minutes until golden brown and bubbly.
  8. Let it rest for 5 minutes before serving.

Notes

For make-ahead options, prepare a day in advance and refrigerate, then bake directly from the fridge. You can also try cooking in an air fryer adjusted to 320°F (160°C) for about 30-35 minutes.
