Cheesy Jalapeño Ranch Chicken Poppers

  • 1 pound chicken breast, diced
  • 1 cup jalapeños, diced
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 cup cream cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For the creamy dip:
  • 1 cup sour cream
  • 1 tablespoon ranch seasoning
  • Chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the diced chicken, jalapeños, ranch seasoning, olive oil, salt, and pepper in a large bowl and mix until evenly coated.
  3. Form the mixture into small balls, about the size of a golf ball.
  4. Line them up on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, or until golden and crispy.
  6. In a separate bowl, combine the sour cream with ranch seasoning and stir.
  7. Garnish with chives and serve warm with the creamy dip.

Notes

You can prepare the poppers ahead of time and bake them right before serving. Customize with different cheeses or add crumbled bacon for extra flavor.
