  • 1/2 teaspoon chili flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/2 cup crumbled feta or goat cheese (optional)
  • 2 green onions, sliced
  • 1 tablespoon lime juice
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and keep cleanup effortless.
  2. Prepare the sweet potatoes: Slice each sweet potato lengthwise down the middle, revealing the vibrant orange flesh. Score the flesh gently with a knife, making diamond patterns. Brush with olive oil and season generously with salt and pepper.
  3. Roast: Place the sweet potatoes cut-side down on the baking sheet and roast them for 30-40 minutes. They should emerge fork-tender, golden, and aromatic.
  4. Sauté the onions: While the sweet potatoes roast, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onions, cooking them for about 3-4 minutes until they begin to soften and become translucent.
  5. Add garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  6. Cook the beef: Add the ground beef to the skillet, allowing it to brown for about 6-8 minutes. Drain any excess grease.
  7. Season: Stir in the smoked paprika, cumin, chili flakes, salt, and black pepper. Allow it to toast for about a minute.
  8. Mix in hot honey: Drizzle in 2 tablespoons of hot honey, allowing the beef mixture to simmer for 2-3 minutes.
  9. Prepare the sweet potatoes: Once roasted, scoop out a small portion of the sweet potato flesh to create ‘boats.’ Fill each boat generously with the beef mixture.
  10. Final roast: Return the stuffed sweet potatoes to the oven for an additional 5-7 minutes.
  11. Garnish and serve: Drizzle with remaining hot honey and top with crumbled cheese, herbs, green onions, lime juice, and avocado slices if desired.

Notes

For a quicker option, use an air fryer to roast the sweet potatoes. Customize with different proteins or add vegetables for extra nutrients.
