  • 1 tbsp unsalted butter
  • 2 cloves garlic (minced)
  • ½ tsp red pepper flakes
  • 2 cups cooked white or brown rice
  • 1 cup sliced cucumber
  • 1 avocado (sliced)
  • ½ cup shredded red cabbage
  • 2 green onions (thinly sliced)
  • Fresh cilantro or parsley (to serve)
  • Sesame seeds (for garnish)
  • Lime wedges (for serving)
  • Drizzle of sriracha mayo
  • Pickled red onions
  • Corn kernels

Instructions

  1. Season the Chicken: Pat the chicken thighs dry and sprinkle with garlic powder, smoked paprika, onion powder, salt, and black pepper.
  2. Make the Hot Honey Glaze: Melt butter in a saucepan, sauté minced garlic, then stir in honey, hot sauce, and red pepper flakes.
  3. Sear the Chicken: Heat olive oil in a skillet and sear seasoned chicken thighs until golden brown.
  4. Glaze the Chicken: Drizzle the hot honey glaze over cooked chicken and allow it to caramelize.
  5. Rest and Slice: Let the chicken rest before slicing into bite-sized pieces.
  6. Assemble Your Bowls: Layer rice, chicken, cucumber, avocado, cabbage, and green onions in a bowl, finishing with sriracha mayo and fresh herbs.
