  • 1 lb chicken thighs, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1/2 cup hot honey
  • 1 cup cooked rice or quinoa
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Slice the chicken thighs into bite-sized pieces, seasoning generously with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes until golden brown.
  3. Pour in the hot honey, stirring gently to coat the chicken. Cook for an additional 2-3 minutes until the sauce thickens.
  4. Prepare your bowls by placing cooked rice or quinoa at the base.
  5. Top with corn, black beans, and sliced avocado.
  6. Add the hot honey chicken on top, garnishing with fresh cilantro and serving with lime wedges.
