Honey Peach Cream Cheese Cupcakes

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh peaches, diced
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with pretty liners.
  2. Cream together the softened butter, sugar, and cream cheese until smooth and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking powder, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture, mixing gently until combined.
  7. Fold in the diced peaches and honey with a spatula.
  8. Fill each cupcake liner about two-thirds full with the batter.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Allow the cupcakes to cool completely on a wire rack before frosting.

Notes

Can substitute peaches with nectarines or pears; store in an airtight container for up to a week in the fridge.
