  • 1 large ripe avocado, sliced or diced
  • 2 cups cooked brown rice or quinoa
  • 1 cup cherry tomatoes, halved
  • A handful fresh cilantro, chopped (optional)
  • 1/4 cup thinly sliced red onion
  • Optional toppings: sliced jalapeños, sour cream or Greek yogurt, lime wedges

Instructions

  1. Make the Marinade: In a mixing bowl, whisk together the honey, fresh lime juice, olive oil, minced garlic, ground cumin, chili powder (if using), along with salt and pepper.
  2. Marinate the Chicken: Add the chicken breasts to the marinade, turning to coat them thoroughly. Cover and refrigerate for at least 15 minutes.
  3. Cook the Grains: Prepare the brown rice or quinoa according to the package instructions, usually taking about 20-25 minutes.
  4. Cook the Chicken: Heat a nonstick skillet over medium-high heat. Add the marinated chicken and sear for about 5-6 minutes on each side until golden-brown.
  5. Rest and Slice: Transfer the cooked chicken to a plate and let it rest for about 5 minutes before slicing.
  6. Prepare the Bowl: Divide cooked rice or quinoa among bowls and top with sliced chicken, avocado, cherry tomatoes, red onion, and cilantro.
  7. Final Touch: Squeeze fresh lime wedges over the bowls before serving.
