Honey Lime Chicken and Rice

A vibrant dish featuring marinated chicken cooked to perfection, served over fluffy rice and topped with a delightful honey and lime sauce.

  • 1/4 cup Honey
  • Juice and Zest of 2 Limes
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 cup Long-grain Rice
  • Salt and Pepper to taste

Instructions

  1. Create the Marinade: In a mixing bowl, combine honey, lime juice and zest, minced garlic, olive oil, salt, and pepper. Whisk until smooth.
  2. Marinate the Chicken: Place the chicken breasts in the marinade, cover, and refrigerate for at least 30 minutes.
  3. Cook the Rice: While the chicken marinates, cook the rice according to package instructions. Set aside.
  4. Heat the Skillet: Heat a large skillet over medium-high heat with a drizzle of oil.
  5. Sear the Chicken: Add chicken to the skillet, searing for 5-7 minutes per side until golden and cooked through.
  6. Rest the Chicken: Remove chicken and let it rest for 5 minutes.
  7. Serve It Up: Fluff rice, plate it, slice the chicken, and drizzle any pan juices on top.

Notes

Marinate the chicken for up to 24 hours for deeper flavor. This dish can also be made in an air fryer or oven.
