Honey Garlic Chicken and Sweet Potato

A delightful dish combining tender chicken and sweet roasted sweet potatoes, drizzled in a luscious honey garlic glaze.

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Whisk together the honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour in the marinade.
  3. Seal the bag or cover the dish and marinate the chicken in the refrigerator for at least 30 minutes.
  4. Preheat your oven to 400°F (200°C).
  5. Spread the cubed sweet potatoes onto a lined baking sheet and drizzle with olive oil.
  6. Roast the sweet potatoes for about 15 minutes until they start to soften.
  7. Remove the baking sheet from the oven and push the sweet potatoes to one side.
  8. Nestle the marinated chicken on the other side of the pan and arrange the green beans around them.
  9. Drizzle any remaining marinade over the chicken and vegetables.
  10. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F and the sweet potatoes are tender.

Notes

Customize with additional vegetables or spices as desired. Leftovers can be stored in an airtight container for up to three days.
