High-Protein Ground Turkey Stuffed Sweet Potatoes

  • 2 large sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1/2 cup corn
  • 1/2 cup shredded cheese (optional)
  • Chopped green onions or cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potatoes several times with a fork.
  3. Bake the sweet potatoes directly on the oven rack or on a baking sheet for 40-45 minutes.
  4. Heat the olive oil over medium heat in a skillet.
  5. Add the chopped onion and minced garlic to the skillet, sautéing until fragrant and soft (around 2-3 minutes).
  6. Introduce the ground turkey, breaking it up as it browns.
  7. Stir in the black beans and corn, allowing the mixture to heat through (about 3-5 minutes).
  8. Slice the baked sweet potatoes open lengthwise.
  9. Spoon the turkey mixture into each potato, adding cheese on top if desired.
  10. Return the stuffed potatoes to the oven for an additional 5-10 minutes, until the cheese melts.
  11. Garnish with chopped green onions or cilantro before serving.

Notes

Great for meal prep; the filling can be made ahead of time and stored for up to 3 days.
