High Protein Blueberry Cloud Bread

A delightful cloud bread that is both high in protein and packed with juicy blueberries, perfect for breakfast or a light snack.

  • 1 cup Cottage Cheese
  • 4 Eggs
  • 1 cup Blueberries
  • 2 tbsp Sweetener (optional: Honey, Maple Syrup)
  • 1 tsp Vanilla Extract (optional)
  • 1 tsp Baking Powder
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Blend the cottage cheese in a mixing bowl until smooth.
  3. Separate the eggs, placing the whites in a large bowl and adding the yolks to the cottage cheese mixture.
  4. Fold the blueberries into the cottage cheese and egg yolks mixture, adding any optional sweeteners or vanilla extract.
  5. Whip the egg whites using an electric mixer until stiff peaks form.
  6. Gently fold the whipped egg whites into the cottage cheese mixture.
  7. Spoon the mixture onto the prepared baking sheet, forming cloud-like shapes.
  8. Bake for 25-30 minutes until the tops are golden brown.
  9. Cool slightly, then enjoy warm or at room temperature.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze individual pieces for up to a month.
