Herby Ricotta Stuffed Peppers

A delightful blend of creamy ricotta and fresh herbs, stuffed into vibrant bell peppers for a beautiful and delicious dish.

  • 4 large bell peppers (red, yellow, or orange)
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut the tops off the bell peppers and remove the seeds.
  3. Combine ricotta, parmesan, basil, parsley, garlic, salt, pepper, and red pepper flakes in a mixing bowl.
  4. Stuff each bell pepper with the ricotta mixture.
  5. Place the stuffed peppers upright in a baking dish.
  6. Drizzle with olive oil and cover with foil.
  7. Bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
  8. Serve warm and enjoy!

Notes

Make-ahead tip: Prepare filling a day in advance. Can be frozen and grilled for a smoky flavor.
