Grilled Seafood Skewers

Delightful grilled seafood skewers featuring shrimp, scallops, and fish, marinated in garlic and lemon for a refreshing summer dish.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 1 pound fish fillets (salmon or tilapia recommended)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Vegetable skewers or bamboo skewers, soaked in water

Instructions

  1. Preheat the grill to medium-high heat.
  2. Prepare the marinade by whisking together olive oil, minced garlic, lemon juice, salt, and pepper in a mixing bowl.
  3. Marinate the seafood by adding the shrimp, scallops, and fish to the marinade, coating each piece and letting it sit for 15 to 30 minutes.
  4. Skewer the marinated seafood onto skewers, alternating types for a colorful presentation.
  5. Grill the skewers for about 2-3 minutes on each side, until the seafood turns opaque and is beautifully charred.
  6. Serve hot with lemon wedges on the side.

Notes

Make ahead: Marinate several hours in advance for deeper flavor. Alternatives: Cook in an air fryer or bake in the oven if you don’t have a grill.
