  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat your grill to medium heat.
  2. Rub the chicken breasts with olive oil, salt, and pepper.
  3. Place the chicken on the grill, cooking for about 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  4. Let the chicken rest for a few minutes, then slice into tender strips.
  5. Combine the salad greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  6. Top the salad with sliced grilled chicken and sprinkle with crumbled feta.
  7. Drizzle the balsamic vinaigrette over the salad and toss gently.
