Grilled Chicken Cobb Salad

A refreshing salad with grilled chicken, crispy bacon, and creamy avocado, drizzled with a tangy honey-Dijon dressing for a burst of flavor.

  • 2 grilled chicken breasts
  • 4 slices of crispy bacon
  • 2 hard-boiled eggs, sliced
  • 1 avocado, sliced
  • 4 cups mixed greens or romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/4 cup blue cheese, crumbled (optional)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Grill the chicken breasts: Preheat your grill to medium-high heat. Season the chicken breasts liberally with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked and you achieve those beautiful grill marks. Let them rest, then slice them into bite-sized pieces.
  2. Prepare the salad: In a large mixing bowl, combine the mixed greens, sliced chicken, crispy bacon bits, sliced hard-boiled eggs, creamy avocado, halved cherry tomatoes, and crumbled blue cheese (if using).
  3. Make the dressing: In a small bowl, whisk together the honey, Dijon mustard, olive oil, and a pinch of salt and pepper.
  4. Combine and serve: Drizzle the dressing over your salad, gently toss to coat, and serve immediately.

Notes

For best results, chop and prep your ingredients in advance. This salad stays fresh for a few days, but tastes best when freshly made.
