Grilled Chicken Caesar Salad

  • 4 boneless, skinless chicken breasts (about 680g)
  • 6 cups fresh romaine lettuce, chopped
  • 1 cup freshly grated Parmesan cheese (about 100g)
  • ½ cup homemade Caesar dressing
  • 2 cups day-old baguette or Italian bread, cubed
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, garlic powder, salt, and pepper. Add the chicken breasts and let them marinate for at least 30 minutes.
  2. Grill the chicken: Preheat your grill to medium-high heat and grill the marinated chicken for about 6-7 minutes on each side until cooked through.
  3. Make the croutons: Preheat your oven to 400°F (200°C) and toss the bread cubes with olive oil, garlic powder, salt, and pepper. Bake for 10-12 minutes until golden brown.
  4. Assemble the salad: In a large bowl, combine the chopped romaine, sliced grilled chicken, Parmesan cheese, and Caesar dressing. Mix gently.
  5. Finish with croutons: Sprinkle the golden croutons on top just before serving.

Notes

Feel free to substitute chicken with shrimp or grilled tofu for a vegetarian twist. Use different greens or cheeses as desired.
