Grilled Cheese with Gouda, Roasted Mushrooms, and Onion

An elevated twist on the classic grilled cheese, featuring creamy Gouda, roasted mushrooms, and caramelized onions for a gourmet experience.

Ingredients

  • 2 slices of bread
  • 2 slices of Gouda cheese
  • 1 cup mushrooms, sliced
  • 1 onion, thinly sliced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sliced mushrooms and onions with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for about 15-20 minutes until they are golden and softened, stirring halfway through.
  3. Heat a skillet over medium heat.
  4. Butter one side of each slice of bread generously.
  5. Place one slice of bread in the skillet, buttered side down, and layer with Gouda cheese, followed by the roasted mushrooms and onions.
  6. Top with the second slice of bread, buttered side up.
  7. Cook until golden brown, about 3-4 minutes. Gently flip and grill the other side until the cheese is melted and the bread is toasted to perfection.
  8. Remove from heat, slice, and serve immediately.

Notes

Consider serving with tomato soup or a crispy salad for a complete meal.
