Green Bean and Feta Salad

A refreshing salad featuring crisp green beans, creamy feta, and vibrant herbs, perfect for summer gatherings or light lunches.

Ingredients

  • 500g fresh green beans
  • 200g feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or dill) for garnish

Instructions

  1. Blanch the green beans in boiling water for about 3-4 minutes until tender-crisp, then drain and rinse under cold water.
  2. Prepare the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl.
  3. Combine the blanched green beans and crumbled feta in a large bowl, toss gently.
  4. Dress the salad with the prepared dressing and toss again to coat.
  5. Garnish with fresh herbs and serve immediately.

Notes

For best results, do not dress the salad until just before serving to maintain the crunch of the beans.
