Greek Chicken Bowl

A vibrant Greek Chicken Bowl filled with marinated grilled chicken, fresh vegetables, and creamy tzatziki sauce.

  • 2 Chicken Breasts
  • 2 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 2 Garlic Cloves, minced
  • 1 tsp Dried Oregano
  • Salt and Pepper, to taste
  • 2 cups Rice or Salad Greens
  • 1/2 cup Tzatziki Sauce
  • 1/2 cup Kalamata Olives
  • 1 Cucumber, diced
  • 2 Tomatoes, diced
  • 1 Red Onion, sliced
  • 1/2 cup Feta Cheese, crumbled

Instructions

  1. Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a mixing bowl to create the marinade.
  2. Add chicken breasts to the marinade and let them sit for at least 30 minutes.
  3. Preheat your grill or skillet; cook the chicken for about 6-7 minutes on each side until fully cooked.
  4. Prepare the base by cooking rice or washing the salad greens.
  5. Slice the cooked chicken into strips and place them atop the rice or greens.
  6. Top with tzatziki sauce, Kalamata olives, cucumber, tomatoes, red onion, and feta cheese.
  7. Serve immediately and enjoy.

Notes

For best flavor, marinate chicken for several hours or overnight. Adjust cooking times if using chicken thighs.
