  • Juice of 2 lemons

  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Tzatziki sauce (store-bought or homemade)

Instructions

  1. Marinate the chicken: In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Immerse the chicken breasts in the marinade, ensuring they’re generously coated. Let them soak up the flavors for at least 30 minutes, or up to a few hours.
  2. Cook the grains: While the chicken marinates, prepare your base. Cook the quinoa or rice according to package instructions.
  3. Grill the chicken: Preheat your grill or grill pan over medium-high heat. Place marinated chicken on the grill, cooking for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  4. Prepare the vegetables: Slice the cherry tomatoes, cucumber, and red onion.
  5. Assemble your bowls: Start with a scoop of quinoa or rice at the base of each bowl. Layer on the sliced chicken, followed by the cherry tomatoes, cucumbers, red onion, and crumbled feta. Finish with parsley and a dollop of tzatziki.
