Golden Crispy Malibu Chicken

A delightful dish featuring golden, crispy chicken layered with ham and Swiss cheese, complemented by a creamy, zesty dipping sauce.

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons olive oil
  • 8 slices ham
  • 8 slices Swiss cheese
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 drops Worcestershire sauce

Instructions

  1. Preheat your oven to 400°F (204°C) and prepare a baking dish with cooking spray.
  2. Create a breading station by placing your seasoned flour in one dish, beaten eggs in a second, and panko breadcrumbs in a third.
  3. Place each chicken breast between plastic wrap and pound them to an even ½-inch thickness.
  4. Season both sides of the chicken with salt and pepper.
  5. Dredge each piece of chicken in the flour, then dip it in the egg, and finally coat it generously with panko breadcrumbs.
  6. Heat the olive oil in a skillet over medium-high heat, and cook the chicken for about 3 minutes on each side until golden brown and crispy.
  7. Layer the crispy chicken in your prepared baking dish, topping each piece with a slice of ham and a slice of Swiss cheese.
  8. Bake for 15-20 minutes until the cheese melts and the chicken reaches an internal temperature of 165°F (74°C).
  9. While your chicken bakes, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, and Worcestershire sauce to create the dipping sauce.
  10. Serve hot, drizzling the sauce over the top or offering it on the side.

Notes

This dish can be prepared ahead of time by pouncing and breading the chicken, then refrigerating it until ready to fry and bake.
