  • 2 medium zucchinis, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the chicken breasts, zucchini slices, minced garlic, olive oil, salt, pepper, and Italian seasoning in a large bowl until evenly coated.
  3. Spread the mixture in a single layer on a baking sheet, giving each piece some space.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and zucchini is tender.
  5. Sprinkle mozzarella cheese on top during the last 5 minutes of baking if using.
  6. Remove from the oven, let it cool slightly, then serve.
