Funfetti Cake Mix Cookie Bars

Soft, chewy bars bursting with white chocolate and rainbow sprinkles, perfect for any celebration.

  • 30.50 ounces (2 boxes) yellow cake mix
  • 1 cup unsalted butter, room temperature
  • 2 large eggs
  • 1 ½ cups white chocolate chips
  • 1 ¼ cups rainbow sprinkles, divided
  • 1 cup sweetened condensed milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the baking pan by lining a 9 x 13-inch pan with parchment paper.
  3. Mix in a large mixing bowl the yellow cake mix, softened butter, and eggs.
  4. Incorporate ⅔ cup of the rainbow sprinkles into the mixture.
  5. Create the base layer by pressing about ⅔ of the dough evenly into the bottom of your prepared baking dish.
  6. Add the white chocolate chips and remaining rainbow sprinkles on top, then pour the sweetened condensed milk evenly over it.
  7. Top with the remaining dough rolled into small balls, pressed down to flatten.
  8. Bake for 30-35 minutes until edges are golden brown and center is set.
  9. Cool completely before lifting out and cutting into squares.

Notes

For best results, use room temperature ingredients and store leftovers in an airtight container.
