Fried Corn with Bacon

A delightful summer dish featuring fresh corn kernels sautéed with crispy bacon for a perfect blend of sweet and savory flavors.

  • 4 cups fresh corn kernels
  • 6 strips of bacon, chopped
  • 1 onion, diced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the chopped bacon in a large skillet over medium heat until crispy. Remove and set aside, leaving drippings in the skillet.
  2. Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.
  3. Stir in the fresh corn kernels and cook for 5-7 minutes until tender and slightly caramelized.
  4. Return the crispy bacon to the skillet, add butter, salt, and pepper, and mix well. Cook for another 2-3 minutes.
  5. Serve warm, garnished with parsley if desired.

Notes

For added flavor, try using fresh herbs or spices. Avoid overcrowding the skillet to ensure proper crisping.
