Fresh & Easy Pasta Primavera

A colorful and flavorful pasta dish featuring vibrant seasonal vegetables, perfect for any occasion.

  • 12 ounces pasta (such as penne or fusilli)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil, chopped, for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Boil the pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to the package instructions until al dente. Reserve a cup of pasta water, then drain and set aside.
  2. Heat the olive oil: In a spacious skillet over medium heat, pour in the olive oil and allow it to warm.
  3. Sauté the onions: Toss in the diced onions and sauté for about 3 minutes. When they become translucent, add the minced garlic and cook for another minute.
  4. Add the vegetables: Add sliced bell pepper, zucchini, yellow squash, and broccoli. Cook for about 5-7 minutes until tender yet crisp.
  5. Incorporate the cherry tomatoes: Gently fold in halved cherry tomatoes and Italian seasoning. Season with salt and pepper, cooking for an additional 2 minutes.
  6. Combine pasta and vegetables: Mix the cooked pasta into the skillet. If the mixture seems dry, add a splash of reserved pasta water.
  7. Finish the dish: Toss everything together until well combined and heated through for a couple of minutes.
  8. Garnish and serve: Remove from heat, garnish with fresh basil and grated Parmesan cheese if desired, then plate immediately.
