French Onion Beef Short Rib Soup

A warm, hearty soup featuring tender short ribs, caramelized onions, and melted Gruyère cheese, perfect for cozy evenings.

  • 2 lbs short ribs
  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup Gruyère cheese, shredded
  • Crusty bread for serving

Instructions

  1. Caramelize the onions: In a large pot, heat the olive oil over medium heat. Add the thinly sliced onions and sprinkle a pinch of salt. Let them cook leisurely for about 20-25 minutes, stirring occasionally until golden-brown.
  2. Sauté the garlic: Stir in the minced garlic and sauté for another minute.
  3. Sear the short ribs: Season the short ribs with salt and pepper, then sear until browned on all sides, about 6-8 minutes.
  4. Deglaze with wine: Pour in the dry white wine, scraping up browned bits from the bottom of the pot.
  5. Simmer the broth: Add the beef broth and thyme, bring to a boil, then reduce heat, cover, and simmer for 2-3 hours.
  6. Shred the short ribs: Remove the ribs, shred the meat, and return it to the pot.
  7. Check seasoning: Taste and adjust seasoning with salt and pepper as needed.
  8. Broil with Gruyère: Ladle soup into bowls, top with shredded Gruyère cheese, and broil until bubbly and golden.
  9. Serve with bread: Enjoy your soup with slices of crusty bread.

Notes

This soup can be made ahead and tastes even better the next day. Freezes well for up to 3 months.
