Flavorful Firecracker Hot Dogs

  • 8 all-beef hot dogs
  • 8 soft hot dog buns
  • ¼ cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice
  • 1 cup shredded sharp cheddar cheese
  • ½ cup diced red onions
  • ½ cup sliced jalapeños
  • Fresh cilantro leaves

Instructions

  1. Make the Firecracker Sauce: In a small mixing bowl, whisk together the mayonnaise, sriracha sauce, honey, smoked paprika, garlic powder, and lime juice until smooth.
  2. Taste and adjust the sauce for heat and sweetness.
  3. Prep the toppings: Dice the red onions, slice the jalapeños, shred your cheese, and chop the cilantro.
  4. Heat the grill to medium-high, around 400°F.
  5. Grill the hot dogs for 5–7 minutes, turning frequently.
  6. Toast the buns on the grill for the last 2 minutes, cut-side down.
  7. Assemble the hot dogs by spreading Firecracker Sauce in each bun, adding the grilled hot dog, and topping with cheese, onions, jalapeños, and cilantro.
  8. Serve immediately for the best flavor.

Notes

Make the Firecracker Sauce ahead of time for deeper flavors. Leftover hot dogs can be stored in the refrigerator for 3-4 days.
