Fiesta Lime Chicken with Avocado

A vibrant dish featuring grilled chicken marinated in zesty lime and spices, served with creamy avocado slices.

  • 4 boneless, skinless Chicken Breasts
  • Juice of 2 Limes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • Salt and Pepper to taste
  • 1/4 cup chopped Cilantro
  • 2 ripe Avocados

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together lime juice, olive oil, garlic powder, onion powder, salt, pepper, and cilantro until well combined.
  2. Marinate the Chicken: Place chicken in a zip-top bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 30 minutes.
  3. Preheat the Grill: Preheat grill to medium heat, or heat a grill pan over medium-high heat.
  4. Cook the Chicken: Remove chicken from marinade and grill for about 6-8 minutes per side until internal temperature reaches 165°F.
  5. Slice the Avocado: While chicken rests, slice the avocados.
  6. Serve: Arrange grilled chicken on a plate, garnishing with avocado slices and drizzle with extra lime juice.

Notes

For best flavor, marinate the chicken for a few hours or overnight. You can also substitute chicken thighs for more flavor.
