Fajita Chicken Casserole Bake

A warm and savory casserole featuring tender chicken, colorful peppers, and a gooey cheese topping, perfect for family gatherings or cozy weeknight dinners.

  • 2 cups cooked, shredded chicken
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups cooked rice or quinoa
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked chicken, diced bell pepper, onion, black beans, corn, cooked rice or quinoa, salsa, chili powder, cumin, salt, and pepper in a large bowl.
  3. Spread the mixture evenly in a greased baking dish.
  4. Top with the shredded cheese.
  5. Bake for 25–30 minutes or until the cheese is melted and bubbly.
  6. Allow to cool for a few minutes before serving.

Notes

Make ahead and store in the fridge for easy baking later. Customizable with different vegetables or spices based on preference.
