Easy Vegetable Soup

A comforting, wholesome vegetable soup packed with a vibrant medley of flavors and health benefits.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 1 zucchini, chopped
  • 1 cup green beans, chopped
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Toss in the chopped onion, carrots, and celery, and sauté for about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Pour in the vegetable broth, diced tomatoes, zucchini, green beans, and corn.
  5. Season with dried basil, oregano, salt, and pepper to taste.
  6. Bring to a gentle boil, then reduce heat and let simmer for 20-30 minutes.
  7. Taste the soup and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh herbs if desired.
