Easy Tuna Pasta Salad

A quick and satisfying tuna pasta salad filled with protein-rich ingredients and vibrant flavors, perfect for lunches or gatherings.

  • 8 ounces dry protein pasta
  • 2 (5-ounce) cans albacore tuna in water
  • 1 (15.5-ounce) can Cannellini beans, drained
  • 4 large hard-boiled eggs
  • 2 scallions, thinly sliced
  • 1 cup frozen peas
  • 1 cup whole milk cottage cheese
  • 1/2 cup mayonnaise
  • 24 tbsp red wine vinegar
  • 2 tsp Dijon mustard
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Combine the cottage cheese, mayonnaise, red wine vinegar, Dijon mustard, dill, garlic powder, onion powder, black pepper, and salt in a large mixing bowl, whisking until smooth.
  2. Bring a large pot of salted water to a rolling boil, then add the protein pasta and cook until al dente.
  3. Drain the pasta and rinse under cold water to stop the cooking process.
  4. Add the drained tuna, Cannellini beans, hard-boiled eggs, scallions, and frozen peas to the mixing bowl, stirring gently to combine.
  5. Fold in the cooled pasta carefully to avoid breaking the pasta or eggs, ensuring everything is evenly coated.

Notes
