Easy Tex-Mex Zucchini Bake

A vibrant and flavorful bake featuring layers of zucchini, black beans, and melted cheese, perfect for any occasion.

  • 4 medium Zucchini (sliced)
  • 1 can Black Beans (rinsed and drained)
  • 1 cup Corn (canned or frozen)
  • 1 can Diced Tomato (drained)
  • 2 tablespoons Taco Seasoning
  • 1 teaspoon Garlic Powder (or minced garlic)
  • 2 tablespoons Olive Oil (or any vegetable oil)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Pepper Jack Cheese
  • 2 tablespoons Melted Butter (optional)
  • 1 cup Salsa
  • 1 cup Guacamole

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Prepare the Zucchini: Wash and slice the zucchini into thin rounds.
  3. Mix the Base Ingredients: In a large mixing bowl, combine zucchini, black beans, corn, diced tomatoes, taco seasoning, garlic powder, and olive oil.
  4. Layer the Bake: Spread half of the mixture in a greased baking dish and sprinkle half of the cheese on top.
  5. Add More Layers: Layer the remaining zucchini mixture over the cheese, followed by the rest of the cheese.
  6. Add Salsa: Pour the salsa over the top.
  7. Bake: Place in the oven and bake for 30-35 minutes.
  8. Garnish with Guacamole: Serve immediately with guacamole on the side or on top.
