Easy Raspberry Chia Pudding

  • 1/4 cup Chia seeds
  • 2 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 pinch Sea salt
  • 1 cup Fresh raspberries

Instructions

  1. Combine ingredients: In your mixing bowl, whisk together the almond milk, chia seeds, maple syrup, vanilla extract, and sea salt until well combined. Allow the mixture to sit for 5-10 minutes to enable chia seeds to swell.
  2. Mix again: After the resting period, give it another good stir to break up any clumps of chia seeds, ensuring a smooth pudding.
  3. Incorporate raspberries: Gently fold the fresh raspberries into the pudding mixture. Save a few for garnishing later, if desired.
  4. Chill: Spoon the pudding into your airtight container and refrigerate for at least 120 minutes or overnight. This allows the mixture to thicken and develop a rich flavor.
  5. Serve: Before enjoying, give the pudding a good stir and add any remaining raspberries or toppings, such as slivers of toasted almonds or a dollop of coconut yogurt.

Notes
