Easy Orzo Pasta Salad with Feta and Sun Dried Tomatoes

  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the orzo: In a large pot, bring salted water to a boil. Add the orzo pasta and cook it according to the package instructions, usually around 8-10 minutes, until it’s al dente. Drain the orzo and set it aside to cool.
  2. Combine ingredients: In a large mixing bowl, combine the cooled orzo, crumbled feta, chopped sun-dried tomatoes, halved cherry tomatoes, diced red onion, and chopped fresh basil.
  3. Prepare the dressing: In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  4. Dress the salad: Pour the dressing over your orzo mixture and toss everything until it’s well coated.
  5. Serve and enjoy: You can serve your salad right away or cover and refrigerate for later.

Notes

This salad tastes even better after sitting for a few hours, so feel free to prepare it in advance. Customize with grilled chicken or chickpeas for added protein.
