Easy One Pan Italian Beef Sausage & Rice Dinner

A comforting and flavorful one-pan meal featuring Italian beef sausage, vibrant bell peppers, and fluffy rice.

  • 1 lb Italian beef sausage (mild or hot)
  • 1 cup long-grain white rice (Basmati or Jasmine)
  • 2 cups chicken broth (or vegetable broth)
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (undrained)
  • 1 tablespoon tomato paste
  • 1 tablespoon Italian seasoning blend
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Red pepper flakes (optional)
  • Fresh parsley, for garnish
  • Grated Parmesan or Pecorino Romano cheese, for serving
  • 1 tablespoon olive oil (if needed)

Instructions

  1. Prepare your ingredients. Slice or crumble the sausage, dice onions and bell peppers, and mince garlic.
  2. Heat your skillet over medium-high heat. Add olive oil if using lean sausage, then brown the sausage.
  3. Transfer the browned sausage to a plate. Add onions and bell peppers to the pan and sauté for 5-7 minutes.
  4. Stir in minced garlic and tomato paste, cooking for another minute.
  5. Add the uncooked rice and cook for 1-2 minutes, then stir in diced tomatoes, Italian seasoning, and oregano.
  6. Pour in the broth, bring to a simmer, and stir in the sausage.
  7. Cover and cook on low for 18-20 minutes until rice is tender.
  8. Let the dish rest for 5-10 minutes. Fluff with a fork and serve garnished with parsley and cheese.
