A quick and healthy low carb burrito bowl that is easy to prepare and delicious.

Ingredients

  • 1 cup cauliflower rice
  • 1/2 cup cooked chicken, shredded
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup corn
  • 1/4 cup diced tomatoes
  • 1/4 avocado, sliced
  • 1/4 cup shredded cheese
  • 2 tablespoons salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add cauliflower rice and sauté for 5 minutes until tender.
  3. Stir in shredded chicken, black beans, corn, and diced tomatoes.
  4. Cook for an additional 3-4 minutes until heated through.
  5. Season with salt and pepper to taste.
  6. Serve in a bowl topped with avocado, cheese, and salsa.
